Baramulla: Kashmir accounts for all kinds of elements to be called the perfect tourist place. Apart from the adorable beauty of the place, the people of the region are the biggest foodies, and along with savoury dishes, they also have a variety of distinct sweets and desserts that flaunt some delicious ingredients and flavors. Henceforth, one such traditional dessert is Tosha.
Kashmir is although famous for Wazwaan and Kehwa but traditional sweet, Tosha is always a sought-after dessert.
A traditional sweet, Tosha, in north Kashmir, which earlier was prepared for a special occasion only as a blessing, is now being sold in a few restaurants to revive the culture and satiate the taste buds of the people.
Zero Miles is one of the cafes in North Kashmir’s Sopore that first made such efforts to revive this traditional sweet two years ago; however, they didn’t continue it for some reasons.
Speaking with this reporter, Jibran Khan, the owner of Zero Miles, said that once they made this traditional sweet available at his cafe, the response from the people was awesome, and they appreciated the locally made delicacies. He explained that it was basically outsourced from a lady in town, and when she got married, we couldn’t keep it going; however, he stated that in the future, I will make this traditional sweet available in my cafe.
Parvez Ahmed, the owner of Modern Sweets and Bakery Baramulla, made a new attempt to revive this old traditional sweet.
He stated that it took him two years to make this possible, and, alhamdulillah, the demand has been extremely high since I opened my outlet.
Parvez said, “We believe in reviving our culture.”
Tosha is famous and is being made in some parts of north Kashmir.
“It is in high demand with people from other parts of Kashmir.”
Tosha’s preparation
Tosa is made from flour, sugar and nuts.
Ingredients to make 10 Tosha
200 grams flour
1 cup ghee
6 tbsp coconut pieces
4 tbsp Raisin pieces
4 tbsp cashew pieces
4 tbsp almond pieces
3 tbsp poppy seeds
7 teaspoons sugar
preparation
Fill a vessel with flour. Mix flour and water well. Knead the flour and prepare it. The dough should be soft; Keep it aside for 15 minutes.
Take a big ball of flour and roll it. Use a rolling pin to roll the dough. Fry it on a tawa till it dries up and turns golden brown in colour.
When the roast is halfway done and browned on both the sides. Place it on a plate and quickly break the bread into small pieces. Keep the pieces of bread in a plate.
After this sprinkle sugar on the bread pieces and mix with all the dry fruits.
Now add hot ghee. They are all combined in one pot. Knead them once again. The more you knead it, the tastier it becomes. If more ghee is required, add it while kneading the dough.
Take a little mixture. Cut out an oval. Tosha is ready for you. Poppy seeds can be spread and wrapped on it.
